At this new facility, Mote is domesticating sturgeon. One of the principal products sturgeon produce is caviar, an extremely expensive commodity worldwide because sturgeon are not plentiful. An easy way to get sturgeon eggs (caviar) is to catch all available. The high price of caviar acts as an incentive for local fishermen to unwittingly destroy the species. If Mote is able to domesticate sturgeon on a large scale, the resulting technology will offer very exciting alternatives to over-fishing.
